Wash the potatoes properly and boil them for 20 to 25 minutes.
Preheat the oven to 400 degrees.
Place them on a baking tray , drizzle olive oil , salt and pepper Bake the potatoes for another 15 to 20 minutes or until tender and cooked through.
Allow the potatoes to cool slightly, cut them in half lengthwise and scoop out most of the flesh, place in a bowl.
In a small pot, warm together the milk and butter until the butter is melted and the mixture is hot but not boiling.
Add lil oil in the pan and fry chicken pieces .. add salt and pepper to it. You can use the shredded boiled chicken too if you want to fry.
Pour mixture over the mashed potatoes mixture along with the sour cream, salt and pepper. Mash the potatoes until smooth and creamy, fold in the green onions, half a cup of the cheese and cooked chicken pieces.
Scoop the potato mixture inside each half of potatoes. Top with the remaining cheese . Sprinkle oregano and crushed red pepper . Bake them for about 15 minutes or until the cheese is fully melted.
