This Khari Achaari Sabzi is a vegetarian option for veggie lovers. Easy to cook and yum to eat.
Take all ingredients of special madala, saute all these on low flame for 2 to 3 minutes and then grind them and then roughly grind them.
Pour oil in the wok and saute onions in it till they get translucent.
Add red chilli powder and crushed red pepper , garlic and saute well for a minute or two.
Throw in splash of water in it so it doesn’t burn.
Now add the carrots and peas saute well.
Add salt , special masala , acahari masala (optional).
Cover the lid and let it cook on low flame till they are half done.
Now add cabbage and potatoes. Splash a little water if required and let it cook on low flame. It should be done in 10 to 15 minutes.
Now squeze fresh lemon juice.
Take on in a dish. Garnish with fresh coriander and green chillies.
After frying the chopped onions with red pepper and garlic paste add the chopped tomatoes and a little water along with all the masalas.
Let it cook on low heat.
When the water is less start frying the masala till it leaves oil.
Saute the peas and carrots in a non stick pan for a minute.
Add in the masala and saute well.
Now let it cook for a while till they are half done. If water is needed add a little.
Add cabbage and potatoes and let it cook on low heat.
When its done sprinkle all spice powder 1/4 tsp and squeeze in lemon juice. Garnish it with fresh chopped coriander and green chillies.
You can add less or more red powder and salt according to your taste.
Make sure the special masala is roughly grinded and not very fine or it will lose its flavor.
Achari masala of any brand is optional but i added it to give it a little more achari touch.-
