Lotus Tres Leches Cake is one of the tastiest cakes I have tasted. Tres Leches means three kinds of milk as this cake with made with three types of milk and the Lotus flavor is used in it. It can be made in form of a cake or a dessert if you think you can’t handle a moist runny cake.
Preheat the oven to 350 degrees F (175C). Cut a butter paper and line a 9-inch round baking pan.
Sift 1 cup flour and 1 tsp baking powder together a few times and set aside.
Separate 6 egg yolks and whites in 2 separate bowls.
Beat half of the sugar (1/4 cup) and egg whites together until stiff peaks.
Beat half the remaining sugar (1/4 cup), egg yolks, and 1 tsp vanilla essence together till it becomes creamy and stiff.
Combine these two mixtures and blend.
Add four mix into this batter and mix with a hand using a spatula till well combined. Pour batter into the prepared pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 12-15 minutes. Do not overcook or it will run dry, keep checking after every 2 minutes if it’s not cooked in the given time
Once baked, let it cool down, remove the cake from the pan, and remove the butter paper from the bottom. Put the cake back in the pan and poke holes in the cake with a fork or anything you like. The idea is to form deep holes in it so that once you pour the milk mixture into it, it absorbs it well.
Mix 300g heavy whipping cream, 250g condensed milk, 300g evaporated milk together, and 100g Lotus spread in a bowl and blend it really well.
Pour the milk mixture over the top of the cooled cake and allow it to soak in. If it fills, let it sit, and then pour the rest of the liquid. If you feel the liquid is too much, don’t use it all but it makes the cake really moist.
I would cover it and leave it overnight in the refrigerator however it will take a few hours for it to soak the mixture completely.
Whip 1 cup heavy whipping cream with 2 tsp of sugar, with an electric mixer until thick. Spread over and around the cake.
Melt 200g lotus spread in the microwave (20 sec) or as needed. Lotus melts quickly, don’t boil. You just need to make it runny so you can spread it over the cake. Once runny pour it and spread it over the cake.
Decorate it as you like with crushed lotus cookies or whipped cream.
Refrigerated it until you serve it.
