Kashmiri chai is one of the delicacy of Pakistani homes. It is served on special occasions. You will mostly get the Pink tea at weddings and functions and sometimes you will make it at home. Some people feel its difficult to make that’s why they have never tried but its actually very easy however you just need at-least half an hour to prepare it. Get ready and enjoy this simple yet tasteful Kashmiri Chai recipe that I make.
Take a saucepan and add 1 liter water in it along with cardamoms, cinnamon stick, salt, Kashmiri Chai, baking soda and boil.
Cook for at-least 30 minutes on high heat till almost half of the water evaporates.
Add a mug of cold water (roughly 350ml) and on high heat stir continuously. Its better to take a deep spoon and stir it like the Chai Wala does it 🙂
Add 1 liter cold milk or to taste and bring to boil and cook for 5-10 minutes.
If everyone wants it with sugar add sugar in it or just serve sugar on the side as some people love it with just salt.
Sieve the leaves and sprinkle crushed almonds and pistachios on it.
Adding cold water is must, the colder the water, the better, it is used to get the pink color and is a necessary step.
You can sieve the Kawa and keep it refrigerated, whenever you want to make tea, add milk in it, boil and serve.
You can add some ground pistachios and almonds while cooking the tea with milk, it will give it enhances nutty flavor.
