Stuffed Chicken Patties – Pakistani bakery puff pastry

Stuffed chicken patties are one of the most famous bakery items in Pakistani culture. In other countries you can easily get sweet patties but hardly get something salty like this. Chicken pateez aren’t famous elsewhere so I have perfected myself in making it at home. You might find it a bit tricky at first but actually its very easy.

You can roll your own puff pastry but since its easily available in market I always buy the prepared one. You will forget Gourmet bakery, Rahat Bakery or Cakes n Bake after trying these. Best thing about these patties is that you can freeze them before baking and can use it anytime in future. Just put them in the oven and its ready just like fresh.

Ingredients

½ kg prepared puff pastry
300g chicken (chicken legs & thighs)
2 tablespoon Butter
1 medium onion chopped
½ teaspoon black pepper
1 teaspoon salt or to taste
2 tablespoon chili garlic sauce
2 Green chilies finally chopped
2 tablespoon milk, more for glazing
Coriander leaves finally chopped

Steps

Batter
Step 1
Boil chicken legs and thighs with 1/2 teaspoon black pepper and salt to taste. Add enough water so the water evaporates during boiling. Take out the bones, shred the chicken and keep aside.
Step 2
Heat 2 tbs butter in a pot and fry onions in it till it get tender and slightly changes the color. Do not brown them. If you don’t like buttery flavor, use oil.
Step 3
Add shredded chicken in it and stir till it is well mixed.
Step 4
Add additional salt and pepper if needed. 2 chopped green chilies, coriander and chili garlic in it. Add milk and if batter is drying up add more milk. Batter should be moist because during baking it will dry up a bit. If you don’t have chili garlic sauce use ketchup.
Step 5
Cook till it becomes bit dry and gooey.
Preparation
Step 1
Roll puff pastry and cut by using cutter in equal pieces.
Step 2
Fill it generously if you like and shape it the way you want, I have shaped it square to save all the pastry. When you cut rounds, some of the pastry is wasted.
Step 3
Push all edges and seal properly, use water if the edges doesn’t stick.
Step 4
Grease baking tray or foil in a baking tray.
Step 5
Put the patties over it and glaze it with beaten egg, if you don’t have egg, use milk but egg looks perfect golden.
Step 6
Bake in a preheated oven at 180c / 350f degrees centigrade for 20 minutes max.
Step 7
Chicken patties are ready, serve hot.
