Chicken and Vegetable Sandwiches are the spicy version of regular chicken sandwich and it tastes really different and good. In these sandwiches, you can use any vegetable of your choice however I have chosen capsicum and cucumber.

boil 500g chicken with salt and black pepper and cook it in enough water so the water evaporates and chicken remain dry. Take the bones out and shred it. If you are using boneless chicken, use 300g chicken.
Heat 1 tbs oil and fry finely chopped capsicum for a minute, add boiled and shredded chicken in it along with soya sauce, chilli sauce, salt and saute for a minute. I use sriracha sauce as chilli sauce and it tastes really good.
Completely cool down the mixture on room temperature, then add finely chopped cucumber in it along with mayonnaise. Add mayonnaise slowly and make a paste according to your taste.
Cut bread corners and generously apply filling inside and cut in triangle shape.
You can prepare the sandwiches in advance but you must cling wrap it or put it in an airtight container so they don’t dried up. Keeping in cloth will not help, I always use cling wrap and they stay fresh for several hours.
