This juicy chicken dish is a must have if you want to serve something new. Enchiladas is a Mexican dish and also famous in United States as well specially where most Mexican people live.
Heat frying pan, place whole tomatoes, cover and roast for 8-10 minutes and keep turning sides in between then remove skin and cut into cubes.
Add cooking oil, onion, garlic, tomato paste, crushed black pepper, cumin powder, paprika powder, dried oregano, sugar, cayenne powder, salt and vinegar. Mix it well.
Add water, mix it, cover and cook on low flame for 10-15 minutes then mash it with the help of the masher & let it cool.
In grinder, add cooked tomato mixture, grind well & set aside.
In saucepan, add water, chicken fillets, onion, fresh coriander, salt, crushed black pepper, garlic, mix well and bring it to boil.
Cover and cook on medium flame for 15-20 minutes then cook on high flame until water dries up then shred it & set aside.
Take shredded chicken, add ¼ Cup of prepared tomato sauce and mix well.
Take a tortilla, add cooked & shredded chicken filling, onion, cheddar cheese, mozzarella cheese and roll it (makes 6-8).
In a baking dish, add & spread prepared tomato sauce and place prepared rolls on top.
Add & spread remaining prepared tomato sauce, sprinkle cheddar cheese and mozzarella cheese.
Bake in preheated oven at 200c/380f until cheese melts (approx. 10-15 minutes).
Sprinkle fresh coriander & serve!
