Sift flour, salt and pepper in a bowl.
Rub the butter in with fingers.
Add water to form a soft dough . Put it on a lightly floured surface and gently knead.
Preheat oven at 190c/375f.
Spray a large pie dish with oil.
Put the pastry dough it it and press with hand onto the edges like a deep case.
Add onions, chicken and cheese into the base. Arrange tomato slices on top.
Beat eggs and milk together with salt and pepper. Pour gently into the case.
Sprinkle with the Parmesan cheese if you like.
Bake for approximately 30 minutes or until golden brown.
Serve hot preferably but can be served cold.
You can add any leftover in it and make a quiche. If you don’t have chicken, add more vegetables or even sausages.
