The yummilicious chicken with cashew nuts is a special treat in a Chinese meal. Once ingredients are prepared the dish is very easy to make.
Wash and dry the chicken and cut into 1 inch square. Add all marination ingredients. A pinch of salt, a pinch of white pepper, 1/2 tsp black pepper, 1 tsp crushed garlic, 1 tbs oil, 1 egg, 3 tbs flour and 1 tbs corn flour in the chicken and marinate it for a while. Now deep fry the chicken pieces in hot oil till it changes color. Drain it and keep it aside.
Heat oil and add 1 tsp crushed garlic and fry till it becomes light golden in color. Now add 1 tbs chili sauce and sauté it for a few seconds.
Add 1/3 cup carrot cubes and fry for 30 seconds then add 4 sliced button mushrooms, 1/3 cup bell peppers cubes, 1/3 cup onion cubes and sauté for a while. Put the pan off the stove.
Add 2 tbs oyster sauce, 2 tbs soya sauce, 1 tsp sugar and 1 cup chicken stock and put it back on the stove. Stir it properly, heat it.
Make a paste by adding 1 tbsp of corn flour in 1 tbsp of water. Mix it well and add it in the gravy.
Let it cook for a minute. At the end add the fried chicken pieces along with fried cashew-nuts and spring onions. Serve hot.
It is always preferable to cut all the vegetables beforehand and keep everything on the counter to avoid fuss during the cooking.
Keep the flame high
Do not flip the chicken pieces again and again during frying. In this way coating will break. Make sure coating is stable when u turn them to the other side. Again keep the flame high to keep them crunchy outside n soft inside. Do not overcook them or they will become very hard.
If chicken stock is not available chicken cube or chicken powder can also be used as an alternate.
Always add fried chicken pieces and spring onions before serving otherwise they will become soggy.
Do not overcook the vegetables just sauté them for a minute to keep them crunchy.
Home made Chinese chilly sauce gives the best authentic flavor but if you are short of time you can buy any chilly sauce from the market.
To make the corn flour paste in it always recommended to take equal proportion of both water and corn flour and mix it properly. Make sure there are no lumps in the mixture before adding it to the sauce.
If u want more grave just add more stock to the same ingredients and increase the quantity of sauces accordingly.

Never thought abut making this dish at home until I came across this recipe….what can I say, it turned out to be just as professional as it is in restaurants! The whole family loved it! There weren’t even any leftovers 🙂
