Chicken with Cashew nuts have many versions, this is a gravy Style with more gravy to enjoy with rice. The dry version can also be served with rice however we are use to of more gravy with Chinese so this version serves that purpose.

Marinate chicken in all marination ingredients and keep it aside for 15 minutes.
Deep fry chicken pieces on high flame for 2 minutes.
Drain in strainer and cover.
If you want to make chicken in advance, then wrap it in a paper towel for 2 minutes and then put in a bowl and cover.
Take a heavy pan saute 1 1/2 tbs cooking oil and 1 tsp garlic till it is beautifully golden.
Add 1 tsp homemade chilli sauce ( if using ready-made then use 3/4 tbs). Saute it for 10 seconds.
Add fried chicken and stir for 10 seconds. Now add all vegetables except green onion and saute for a minute.
Now add 1/4 tsp sugar, 2 tbs oyster sauce and 1 tbs soya sauce and fry for a while.
Add 1 cup chicken stock or take one chicken cube and dissolve in one cup of water. Bring it to boil and thicken with 1 tbs cornflour paste.
Mix green onions in it.
Deep fry cashew nuts in hot oil till they are beautifully golden.
Take them out on paper towel. Do not add hot cashew nuts in the gravy. Let them cooled down completely and then sprinkle on the top after pouring the gravy in serving dish.
Serve hot with garlic or egg fried rice.

Loved it. I just love cashewnuts in gravy and was looking for something like it. Turned out really good and I make it in routine now
