Chicken yukhni pulao is one of the most cooked rice item in Pakistani homes and is equally famous among adults and children. This recipe can be used with mutton as well if you like. If followed exactly you will end up with rich pulao that whole family will love.
Whether a Dawat menu of traditional home style cooking, this chicken Pulao will be a hit both ways. Follow the step by step recipe for the desirable results.
Place 2 sliced onions, 2 inch ginger piece, 1 bulb garlic cloves whole, 3 tbsp coriander seeds, 2 tbsp fennel seeds, 1 tbsp whole hot spices (Garam Masala) and 1 tsp cumin seeds in a muslin cloth, tie into a pouch.
Boil 1/2 kg chicken in 5 cups of water along with this pouch till chicken gets tender.
Remove chicken , strain stock and keep aside.
Heat 1/2 cup oil in a separate pot add slices of 2 onions and fry. When onions becomes translucent add remaining 1 tbsp whole spice (Garam Masala), 1 tsp ginger garlic paste and fry again till it becomes golden brown.
Add chicken pieces and fry for a while.
Now add 1 tsp red chillies, 1 tbsp green chillies paste, 2 tsp salt, 1 cup yogurt (beaten )and 1 cubed tomato.
Cover and let it cook on high flame. Yogurt and tomato will leave water.
Take off the lid when the water starts drying out.
Fry it for a while till it leaves oil.
Pour the stock and water (if required) and give it a good boil.
When it starts boiling add soaked rice and cook on medium flame till the water dries out.
Sprinkle white cumins, one green chilli (with a slit) and leave on dum (Lid on) till they are fully cooked.
Serve hot with salad and Raita
