Caramelize sugar in a pan. Leave it on slow flame and let it melt. When it melts gets brown take it out of the pan and pour it on the base of the pudding pan.
Now mix all other ingredients in a bowl with a whisk.
Make sure all ingredients are on room temperature.
Pour this mixture over the caramel and give it a water bath in a preheated oven at 180 for 20 to 25 minutes.
For sponge cake, combine egg yolk, sugar, salt, vegetable oil, and evaporated milk.
Mix well. Sift in cake flour, baking soda and baking powder. Mix well.
Beat egg whites and sugar to make the meringue.
Mix meringue and sponge cake mixture. Pour it over the custard mixture in a pan with caramel, make sure to strain the pudding when u put it in the oven.
Pour the sponge cake mixture on the half baked pudding.
Place the pan in a deep baking tray once again and pour hot water about 1 inch. Bake in a pre heated oven for another 45 to 50 minutes or till the cake is cooked. You can cover the pan with an aluminium sheet as well.
Cool and refrigerate at least 4 hours.
