Egg fried rice are the favourite to serve with Chinese gravy. They are easy to make and compliment the Chinese food very well
Soak one glass of rice in water for 20 to 30 minutes.
Boil rice with salt, when tender strain them and spread them in a tray or any wide dish to cool down.
Take 3 eggs and beat them with salt pepper and a little soya sauce and make scramble eggs and set aside.
In a wok heat some oil. Add white part of 1 green onion and stir fry for a while.
Add 1 peeled and diced carrot, 1/2 cup boiled peas and 1/2 cup Julienne cabbage, salt and pepper and stir fry the vegetables. After a minute, add scrambled eggs, 2 tbs soya sauce, 1 tbs chillies sauce and rice and toss the rice.
Toss them for 5 minutes, add spring onion and serve.
