This South African Glazed Cake is a very different and extremely yummy cake. The procedure is a little long and it requires full attention but its totally worth the wait. People of all generations will enjoy it.
Beat eggs for 4 minutes. After that start adding granulated sugar slowly to the eggs and continue beating for 4 more minutes, so the total time of beating 4 eggs will be 8 minutes
Add coffee now after beating the sugar with eggs and fold it carefully
Take flour and sift it thrice. Add the flour in the eggs batter in portions and fold it until it is well combined
Grease the baking pan of 8 inches with oil and pour the batter carefully. bang the pan on the counter surface twice so the air is released
Bake for 20 to 25 minutes depending upon your oven for 180 degree c
check the cake with the skewer, if it comes out dry means the cake is completely cooked. Take it out and let it cool down on the wire rack for a while and then keep it in a plastic bag so that it won’t dry out and you start preparing the glaze and icing
Cook all the mentioned ingredients together till the mixture becomes thick
Beat the cream with icing sugar and coffee into hard peaks
Take canned peaches 2 to 3 in total will be used . mash them or cut them in small pieces as you like
Cut the cake in to three parts using a big knife
Moist one side with peach canned syrup/juice. use 3 to 4 table spoon
Spread the cream evenly and then give a thin layer of mashed or sliced peaches ( 1/2 peach is enough for one layer)
Place the second part of the cake over it and repeat the same steps ( syrup , cream and 1/2 mashed peach layer)
Now put the third part on the top and moist it with syrup again. Now apply cream and cover all sides of the cake
Drizzle chocolate glaze on the top of the cake and make modern art. Also decorate with peach slices
You can also use caramelized sugar to decorate the cake if you desire. For that take 2 table spoon of sugar in a pan and melt it on the stove. When it melts completely drop it to the steel tray and let it cool. crush later and sprinkle over the cake
Refrigerate minimum for 6 to 7 hours or preferably over night.
Serve chilled.
